Here is your weekly Friday recipe! Unfortunately I do not have a photo of it, but it is a recipe my Grandma used to make, so I promise it is good :)
Blueberry Pineapple Dream
1-1/2 cups fresh blueberries (or frozen drained)
½ tsp vanilla
1 can (240 ml) crushed pineapple
1 lge pkg of Raspberry Jello
½ cup chopped pecans or walnuts
1 cup sour cream
1 pkg (250 g) cream cheese softened
½ cup sugar
Drain pineapple
Prepare Jello as per instruction in 9X13.
Hint – use the drained pineapple juice as part of your cold water in the Jello.
- Refrigerate until partially set (Jello will hold fruit in place but not set completely set) Mix in berries & pineapple and return to fridge to finish setting.
- Blend together cream cheese, sour cream, sugar & vanilla
- Spread over set salad
- Sprinkle with nuts
Simple, refreshing and best of all – you can make a day ahead.
