Shipwreck Casserole

Here’s a recipe that has been used and loved by my Grandma, Mom, and I… It keeps getting passed along! It’s perfect on a cold day… Hope you all enjoy!

 1 lb ground beef
Potatoes
Carrots
Onion
Minute Rice
Can of Tomato Soup
French’s French Fried Onions

 1) 1/3 lb ground beef
2) Layer of potatoes sliced ¼” thick
3 ) Layer of Carrot Coins
4 ) Layer of Onion sliced into rings
5 ) Sprinkle with 2 tbsp minute rice
6 ) Salt & Pepper

 Repeat steps 1-6

 Top with the last of the ground beef

Cover with can of tomato soup (undiluted)

Top with French’s French Fried Onions

Bake 1-1-1/2 hours in 350 degree oven in covered casserole

 

Serves 6 – serve with salad and bread rolls

 Note: An old family standby. All quantities can be increased to feed more and the vegetables can be changed up to suit whatever you have on hand. Reheats very well.
